nic and holly cake studio began with Nic, a self-taught baker from New Zealand whose love of cake artistry first took shape while creating birthday cakes for her daughter, Holly, in Balmain, Sydney.
What began as a joyful creative outlet soon evolved into a deeper exploration of design, technique, and the expressive possibilities of cake as an art form.
The studio’s name — combining nic and holly — reflects these beginnings and the years of learning, experimentation, and refinement that followed.
Nic’s journey has taken her from New Zealand to Sydney, then to Singapore and Koh Samui, and now to Bowral in the Southern Highlands of New South Wales — each place has shaped her creative perspective, inspiring a design approach influenced by culture, landscape, and the textures and beauty of the natural world.
A lifelong connection to art, yoga, and nature runs through everything she creates — cakes that are balanced in composition, considered in texture, and beautiful in detail.
Today, Nic designs bespoke wedding and celebration cakes that feel both sculptural and refined — each one crafted with intention, care, and artistry for clients across the Southern Highlands and Sydney.
